Garlic shrimp – originated in the North Shore is a shrimp fried with garlic oil, farmed in Kahuku. If you want to eat the most delicious garlic shrimp in Hawaii, you must go to the North Shore! I would like to introduce my top 2 favorite shrimp trucks “Giovanni’s” and “Fumi’s”.
Giovanni’s Shrimp Truck
There are two trucks in Haleiwa and Kahuku. First is the one from Haleiwa, easier access from Waikiki.
Giovanni’s is probably the most popular shrimp truck on Oahu, also known as the origin of garlic shrimp. If you can not make up your mind on which garlic shrimp to have I definitely recommend Giovanni’s!
However it is very popular and for that you will always need to wait in such a long line. There are many benches nearby which could be available if you wait, but the downside is that here they have no restrooms.
I ordered Scampi, which is most popular menu. The fresh shrimp and garlic oil was so good!

Fumi’s Kahuku Shrimp
Fumi’s garlic shrimp was so delicious! Most probably because aquaculture pond where the shrimps come from are right next by the truck.
I ordered Butter Garlic Shrimp. It was not too oily but light. Personally, I prefer the light “Fumi’s” rather than the oily “Giovanni’s”.
There is also a tent, table, and a restroom with a place to wash your hands. It was clean. In addition, I did not have to wait in a line like I had to do for “Giovanni’s”.
Kahuku is located a bit far from Waikiki, but it was definitely worth a visit!
